Find Your Comfort Food: Vegan Recipe to Battle a Pizza Craving

I actually read the “find your comfort food tip” in this post at Seattle Vegan Score about thriving as a vegan. This tip goes perfectly with my new favorite comfort food. I have been craving pizza, though without the oil and cheese and assorted metric ton of calories in each slice of a traditional pizza. So here was the inspiration that struck me this week. It started with these:


Out of the box, they look like this:

Stick with me! There’s a payoff here to my story. While cooking whole-wheat spaghetti and homemade pasta sauce (1 28 oz. can of Muir Glen pureed tomatoes, 1 14 oz. can of diced tomatoes, parsley flakes, oregano, basil and 2 tablespoons honey — an ingredient tip from a McDougall version of pasta sauce — and red pepper flakes for heat) I decided to take the sauce a teaspoon at a time, drizzle over the crackers and sprinkle Vegan Parmesan over it (I use Mrs. Dash table blend seasoning instead of salt in that recipe). Put in the oven at 375 degrees for eight minutes on a cookie sheet lined with parchment paper.

And the result is this ….

Pizza crackers. Totally satisfied my craving. You can spray with Bragg’s Liquid Aminos if you want more of a salt kick to them, or serve without. I think I ate about 10 of these right out of the oven …. so that’s my stamp of approval.

FYI: In this nutrition profile, one serving is three crackers equaling 50 calories, not counting the topping which I don’t think adds too much more. Trust me, they taste amazing fresh from the oven.
