Quick, Oil-Free Stir Fry


This is SO EASY and fast to make. I fixed this today as the drizzle outside kept making the day drearier and drearier.

Quick, Oil-Free Stir Fry

1 box chopped mushrooms (white button or Baby Bella work fine)

1 head of broccoli, coarsely chopped

1 yellow onion, coarsely chopped

1/4 cup red onion, coarsely chopped

1 carrot, diced

1 can of pinto beans, drained and rinsed

4-5 garlic cloves, minced

Vegetable broth — just a thin layer that is enough to cover bottom of pan


Red pepper flakes to taste

2 teaspoons cumin

Cashew Sprinkle — a handful of cashews, 1/4 cup Bragg Nutritional Yeast and a tablespoon of Bragg Sprinkle Seasoning (or any blend of herbs that you prefer) mixed together in blender or Magic Bullet. The Cashew Sprinkle is optional. It does give the mix of vegetables a creamier texture after the steam-fry and added a really nice flavor.

To prepare:

Add broth to the pan and turn it to high heat. Add garlic, onions, mushrooms, broccoli, carrot and beans. Cover to steam-fry for about 3-4 minutes on high or medium high heat, just long enough to soften vegetables. 

Take pan off burner and add seasonings to mix in. Enjoy!
