New Feature: Dinner and a Documentary

When we went plant-based, there were two things that needed to be a constant in life to keep with it: new recipes and inspiration from others. So occasionally on this blog I now will offer a recipe suggestion, either new or one from a previous blog post, along with a documentary recommendation to keep you inspired on your own health journey.  

So here’s the first dinner idea:

Spicy Black Beans Over Rice

2 cans black beans

2 cans low sodium diced tomatoes

1 onion, diced

1 cup frozen corn, thawed

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 tablespoon chili powder

1/4 teaspoon habanero or red pepper flakes (optional)

Water sauté the onion on high heat until soft, about 4 minutes, then add beans, tomatoes and spices. Add the corn toward the end of the cooking cycle to retain crispness. Serve over rice and with a salad. This makes a lot, so it’s perfect to have each night with the series below. And bonus: It won’t make you fat; each as much as you want!
