Raw Fruit Pie with Date Nut Crust (Personal Size)

If you have the ingredients, and there are not a lot of those in this, you can put this together in about five minutes. Perfect as a personal dessert pie for guests, or for yourself for breakfast, which is what I served myself this morning.

Raw Fruit Pie with Date Nut Crust
(Makes one pie that fits into small serving dish)

1/2 cup walnuts

1/2 cup almonds

3-4 Medjoool dates, split, pitted

Add these ingredients to food processor with a dash of water and combine for 15-30 seconds until you have a crumbly crust consistency. Pulse more if you want it to be smooth. Empty out into serving dish and press into crust to fill bowl.

Filling

3 tablespoons blueberries

3 tablespoons cherries, pitted (I buy them frozen and pitted, thaw before using)

1-2 drops liquid Stevia

1 tsp. vanilla extract

Add filling ingredients to processor and blend for 10-15 seconds, just enough to purée. Process less if you want more of the berries left intact. Pour into pie crust. Enjoy!
